Since I got laid off I figured that I better start being a bit more frugal with my foodstuffs. I'm naturally somewhat frugal- using 3/4lbs of meat when recipes for chili, spaghetti, etc call for 1 lbs. and the like- just because that's how I was raised. Well anyway, I was evaluating my food stores and noticed a few things:
1. I still have about 20 lbs of wheat flour
2. I only have (had, now) 5 lbs. of white flour
3. I still had that hunk of ham that was given to me.
4. I had some cheese that was 2 days from expiring.
So I did what anyone in my situation would have done, I made stromboli! I learned about the miracle of stromboli from my friends' mom and ever since then I have been in love. I love to experiment with different flavors of bread and things to stuff it with- my favorite is a sundried tomato bread with American cheese and bell peppers, tasty!
So yeah,cheddar and ham stromboli is the new lunch of choice in the Forbes household, the one I made will last a week easily, I may have to freeze part of it because it's so big.
While I was stromboli making I also made a loaf of bread (60% white 40% wheat with some milled flax just for fun) and some breadsticks to have with some spaghetti I'm making for dinner. The spaghetti will be sans meat and feature veggies instead- I still have some summer squash in the freezer that I think is great for putting in spaghetti.
Since I've been buying extra food I shouldn't have too much of a problem on that front for the next few weeks/months, here's hoping I find a job soon!
